LET’S MAKE IT

Step by step

  1. 01

Mash or grind the shallots, garlic, and macadamia nuts into a coarse aromatic paste.

  2. 02

Heat the vegetable oil in a wok or large skillet over medium-high heat.

  3. 03

Add the spice paste and sauté for 2 minutes until fragrant and lightly golden.

  4. 04

Push the paste to one side, pour the beaten eggs into the empty space, and scramble until just set.

  5. 05

Add the chicken strips and stir-fry for 3 to 4 minutes until completely cooked through.

  6. 06

Toss in the cooked noodles, shredded cabbage, and sweet soy sauce; stir continuously for 3 minutes over high heat until evenly glossy and piping hot.

A LITTLE KITCHEN KNOW-HOW

Bumbu Stir-Frying

Frying ground aromatic spice pastes in hot oil to release essential oils before adding main proteins or noodles.

Notes from the kitchen

  • Pre-cook noodles slightly firm as they will absorb sauce and soften further during stir-frying.
  • Kecap manis burns easily due to high sugar content, so keep noodles moving once added.
  • Original home-cooking adaptation inspired by Indonesian; regional versions vary.
  • Use halal-certified meat, poultry, stock, sauces, cheese and other processed ingredients. Check labels and avoid cross-contamination. Recipe screening is not halal certification.
