LET’S MAKE IT

Step by step

  1. 01

Pat the turkey wings dry with paper towels and season evenly on all sides with Cajun seasoning blend.

  2. 02

Heat oil in a heavy Dutch oven over medium-high heat and sear turkey wings until deep golden brown on both sides, about 8 minutes, then set aside.

  3. 03

Reduce heat to medium, sprinkle flour into remaining oil, and stir constantly with a wooden spoon for 12 to 15 minutes until the roux turns a milk chocolate brown.

  4. 04

Add diced onion, green pepper, celery, and garlic to the roux, stirring continuously until vegetables soften, about 5 minutes.

  5. 05

Slowly pour in warm halal chicken stock while whisking constantly to prevent lumps, bringing the gravy to a gentle simmer.

  6. 06

Return turkey wings to the pot, cover tightly with a lid, reduce heat to low, and simmer for 40 minutes until turkey is fork-tender and gravy is thick.

A LITTLE KITCHEN KNOW-HOW

Dark Roux Building

Cooking equal parts fat and flour over medium heat until it turns a deep copper brown color, providing intense earthy flavor and body to the gravy.

Notes from the kitchen

  • Stir the roux constantly and scrape the corners of the pan to prevent scorching.
  • If gravy becomes too thick while simmering, add a splash of warm stock to loosen it.
  • Original home-cooking adaptation inspired by Cajun Creole; regional versions vary.
  • Use halal-certified meat, poultry, stock, sauces, cheese and other processed ingredients. Check labels and avoid cross-contamination. Recipe screening is not halal certification.
