Crispy Sesame Soy Glazed Cod Fillets

LET’S MAKE IT

Step by step

  1. 01

Pat cod fillets thoroughly dry with paper towels, then dust lightly on all sides with potato starch.

  2. 02

In a small measuring cup, combine soy sauce, brown sugar, minced garlic, and apple juice.

  3. 03

Heat vegetable oil in a large non-stick skillet over medium-high heat until shimmeringly hot.

  4. 04

Lay cod pieces into the skillet and sear undisturbed for 3 to 4 minutes until a pale golden crust forms.

  5. 05

Carefully flip fish and sear for 2 to 3 minutes more until cooked through.

  6. 06

Reduce heat to low, pour the soy glaze around the fish, and gently spoon glaze over fillets as it bubbles and thickens for 1 minute.

  7. 07

Off heat, drizzle sesame oil and scatter fresh chopped scallions over the top before serving.

A LITTLE KITCHEN KNOW-HOW

Pan-Glazing Fish

Adding a sweetened sauce directly into the pan during the final minute coats crispy seared surfaces without making the fish soggy.

Notes from the kitchen

  • Potato starch produces a lighter, crispier barrier on fish fillets than regular flour and holds glaze effectively.
  • Apple juice introduces a natural fruit acidity and subtle sweetness without using cooking alcohol.
  • Original home-cooking adaptation inspired by Korean-inspired; regional versions vary.
  • Use halal-certified meat, poultry, stock, sauces, cheese and other processed ingredients. Check labels and avoid cross-contamination. Recipe screening is not halal certification.
