LET’S MAKE IT

Step by step

  1. 01

Melt 1 tablespoon of butter in a pan over medium heat and sauté the diced onion for 5 minutes until soft and golden.

  2. 02

In a bowl, mix the cooked buckwheat groats with the sautéed onion and half of the chopped fresh dill; season lightly with salt and black pepper.

  3. 03

Cut a deep horizontal pocket into the side of each chicken breast, fill generously with the buckwheat mixture, and seal the opening with toothpicks.

  4. 04

Melt the remaining tablespoon of butter in a skillet over medium-high heat and sear the stuffed chicken breasts for 3 minutes per side until browned, then remove to a plate.

  5. 05

Add the grated carrots and halal chicken stock to the skillet, return the chicken breasts, cover with a lid, and simmer gently over low heat for 15 minutes until chicken reaches an internal temperature of 165°F (74°C).

  6. 06

Transfer chicken to a serving platter, remove toothpicks, stir sour cream and remaining dill into the simmering carrot pan sauce off the heat, and spoon over the chicken.

A LITTLE KITCHEN KNOW-HOW

Pocket Stuffing

Creating a clean lateral slice in boneless chicken breasts creates an enclosed pouch that keeps grain fillings moist during braising.

Notes from the kitchen

  • Avoid overstuffing the chicken pockets so the meat can seal around the filling easily without tearing.
  • Remove toothpicks before serving to ensure safe eating for everyone at the table.
  • Original home-cooking adaptation inspired by Polish; regional versions vary.
  • Use halal-certified meat, poultry, stock, sauces, cheese and other processed ingredients. Check labels and avoid cross-contamination. Recipe screening is not halal certification.
