LET’S MAKE IT
Step by step
- 01
Preheat oven to 350°F (175°C). Soak the bread slice in 0.25 cup of milk in a small bowl for 5 minutes, then mash into a paste.
- 02
Heat a skillet over medium heat, add ground beef and diced onion, and cook for 7 minutes while crumbling meat until browned.
- 03
Stir curry powder, ground turmeric, chutney, mashed bread paste, and 0.5 tsp salt into the skillet until thoroughly mixed.
- 04
Transfer meat mixture to a 2-quart baking dish and press into an even layer. Press bay leaves flat onto top of meat.
- 05
Whisk remaining 0.5 cup of milk and eggs together in a bowl until smooth.
- 06
Gently pour egg custard mixture evenly over the beef layer.
- 07
Bake for 25 to 30 minutes until top custard layer is golden and set. Let sit 5 minutes before serving.
A LITTLE KITCHEN KNOW-HOW
Panade Integration
Mixing milk-soaked bread into minced meat binds moisture to keep baked meat dishes tender and prevent drying.
Notes from the kitchen
- Pressing bay leaves flat prevents them from floating up into the egg layer while baking.
- Serve with turmeric-scented yellow rice and raisins for traditional pairing.
- Original home-cooking adaptation inspired by South African; regional versions vary.
- Use halal-certified meat, poultry, stock, sauces, cheese and other processed ingredients. Check labels and avoid cross-contamination. Recipe screening is not halal certification.
