LET’S MAKE IT

Step by step

  1. 01

Pat the beef strips thoroughly dry with paper towels and season evenly with salt and ground coriander.

  2. 02

Heat 1 tablespoon of vegetable oil in a large skillet over high heat until shimmering.

  3. 03

Add the beef strips in a single layer and sear without moving for 2 minutes until deeply browned, then stir and cook for 1 additional minute before transferring to a plate.

  4. 04

Lower heat to medium, add the remaining oil, and cook the sliced red onion for 5 minutes until soft and caramelized around the edges.

  5. 05

Stir in the garlic, curry powder, apricot jam, tamarind paste, and beef broth, simmering for 3 minutes until the sauce thickens into a glossy glaze.

  6. 06

Return the seared beef and juices to the skillet, tossing constantly for 2 minutes until heated through and coated in sauce.

A LITTLE KITCHEN KNOW-HOW

Sosatie Glazing

Reducing fruit preserves and tangy tamarind into a quick skillet reduction to mimic traditional sosatie marinade flavors without long overnight soaking.

Notes from the kitchen

  • Do not overcrowd the skillet during the initial sear to prevent steaming the beef.
  • If tamarind paste is unavailable, substitute with an equal amount of fresh lemon juice combined with brown sugar.
  • Original home-cooking adaptation inspired by South African; regional versions vary.
  • Use halal-certified meat, poultry, stock, sauces, cheese and other processed ingredients. Check labels and avoid cross-contamination. Recipe screening is not halal certification.
