A LITTLE KITCHEN KNOW-HOW

Demleme

A grain-steaming technique where cooked pilaf rests covered with an absorbent layer to finalize grain separation.

Notes from the kitchen

  • Placing a cloth or paper towel between the pot and lid during resting absorbs moisture and keeps bulgur fluffy.
  • Original home-cooking adaptation inspired by Turkish; regional versions vary.
  • Use halal-certified meat, poultry, stock, sauces, cheese and other processed ingredients. Check labels and avoid cross-contamination. Recipe screening is not halal certification.
