LET’S MAKE IT
Step by step
- 01
Marinate sliced beef with half the chopped garlic, halal soy sauce, and half the ground black pepper for 15 minutes.
- 02
Heat 1 tablespoon of oil in a wok or heavy frying pan over high heat until smoking.
- 03
Add the marinated beef in a single layer and sear rapidly for 1 to 2 minutes until brown on the outside but still pink inside. Remove beef and set aside.
- 04
Add remaining 1 tablespoon of oil to the wok, then cook remaining garlic, onion wedges, and pineapple for 2 to 3 minutes until pineapple edges caramelize slightly.
- 05
Return the beef along with its resting juices to the wok, pour in the halal fish sauce, and stir-fry briskly on high heat for 1 minute.
- 06
Sprinkle over remaining black pepper and serve immediately alongside steamed jasmine rice.
A LITTLE KITCHEN KNOW-HOW
High-Heat Pan Searing (Xào Lửa Lớn)
Cooking marinated protein rapidly over smoking high heat to retain juiciness and develop caramelization before tossing with vegetables.
Notes from the kitchen
- Slice beef thinly when partially frozen to get clean, paper-thin strips that cook quickly without toughening.
- Avoid crowding the pan during the beef sear step to prevent the meat from steaming in its own liquid.
- Original home-cooking adaptation inspired by Vietnamese; regional versions vary.
- Use halal-certified meat, poultry, stock, sauces, cheese and other processed ingredients. Check labels and avoid cross-contamination. Recipe screening is not halal certification.
