LET’S MAKE IT

Step by step

  1. 01

Heat olive oil in a heavy Dutch oven or deep skillet over medium-high heat. Season lamb cubes with salt and pepper, then sear in batches until browned, about 6 minutes total. Set lamb aside.

  2. 02

In the same pot, add onion and carrots. Saute for 4 minutes until onion begins to soften.

  3. 03

Return lamb to the pot and pour in the halal beef stock. Bring to a boil, then lower heat to low, cover, and gently simmer for 30 minutes until lamb is tender.

  4. 04

While stew simmers, prepare damper dough: rub cold butter into self-raising flour using your fingertips until it resembles coarse breadcrumbs. Stir in chopped rosemary.

  5. 05

Make a well in the flour center, pour in milk, and mix quickly with a butter knife until soft dough forms. Divide into 4 equal round balls.

  6. 06

Uncover stew, gently drop damper dumplings onto top of simmering stew. Cover tightly and simmer on low for 15 minutes without opening lid until dumplings are puffed and cooked through.

A LITTLE KITCHEN KNOW-HOW

Steam Dumpling Cooking

Cooking dough balls directly on top of a simmering liquid trapped under a tight lid cooks them via hot steam.

Notes from the kitchen

  • Do not over-mix damper dough; light handling ensures fluffy, soft dumplings rather than dense bread balls.
  • Keep the lid tightly closed during dumpling cooking to trap steam essential for rising.
  • Original home-cooking adaptation inspired by Australian; regional versions vary.
  • Use halal-certified meat, poultry, stock, sauces, cheese and other processed ingredients. Check labels and avoid cross-contamination. Recipe screening is not halal certification.
