LET’S MAKE IT

Step by step

  1. 01

Heat olive oil in a large deep skillet over medium-high heat. Add the sliced halal beef sausages and sear until golden brown on all sides, about 5 minutes. Remove sausages and set aside on a plate.

  2. 02

In the same skillet, turn heat down to medium and add the diced onion, carrots, and green apple. Cook for 5 minutes until onions soften.

  3. 03

Sprinkle the curry powder over the vegetables and stir continuously for 1 minute until fragrant.

  4. 04

Gradually pour in the halal beef broth while scraping up any browned bits stuck to the bottom of the skillet.

  5. 05

Return the browned sausages to the skillet and bring the mixture to a gentle boil. Reduce heat to low, cover, and simmer for 10 minutes until carrots are tender.

  6. 06

Stir in the cornstarch slurry and frozen peas. Simmer uncovered for 3 minutes until the gravy thickens nicely. Serve hot over steamed white rice or mashed potatoes.

A LITTLE KITCHEN KNOW-HOW

Flavor-Base Blooming

Toasting curry spices directly in hot oil and vegetable residual fat before adding liquid releases oil-soluble flavor compounds.

Notes from the kitchen

  • Using a tart green apple like Granny Smith balances the warm curry spices with classic Australian sweet-savory notes.
  • Ensure sausages are well-browned first to build depth in the skillet gravy.
  • Original home-cooking adaptation inspired by Australian; regional versions vary.
  • Use halal-certified meat, poultry, stock, sauces, cheese and other processed ingredients. Check labels and avoid cross-contamination. Recipe screening is not halal certification.
