LET’S MAKE IT

Step by step

  1. 01

Whisk together the sifted flour, salt, eggs, and whole milk until smooth, then cover and rest the batter for 20 minutes.

  2. 02

Preheat your oven to 220°C (425°F) and add the vegetable oil into a 9x13-inch metal roasting pan.

  3. 03

Place the oil-filled pan into the hot oven for 10 minutes until the oil is shimmering hot.

  4. 04

Sauté the red onion and apple slices in a small skillet over medium heat for 4 minutes until slightly softened.

  5. 05

Carefully transfer the hot roasting pan from the oven, arrange the sausages, onions, apples, and thyme inside, and immediately pour over the batter.

  6. 06

Return to the oven and bake uninterrupted for 25 to 30 minutes until the batter is dramatically risen, crisp, and golden brown.

A LITTLE KITCHEN KNOW-HOW

High-Heat Batter Baking

Pouring a cold liquid flour-egg batter into hot fat to force instant steam production and rapid expansion.

Notes from the kitchen

  • Never open the oven door during the first 20 minutes of baking or the batter will deflate.
  • Using room temperature eggs and milk ensures maximum rise in the Yorkshire batter.
  • Original home-cooking adaptation inspired by British; regional versions vary.
  • Use halal-certified meat, poultry, stock, sauces, cheese and other processed ingredients. Check labels and avoid cross-contamination. Recipe screening is not halal certification.
