LET’S MAKE IT
Step by step
- 01
Boil sweet peas in salted water for 3 minutes until bright green, then drain well.
- 02
Transfer hot peas to a food processor with fresh mint, 20g butter, and a pinch of salt; blend until smooth.
- 03
Season lamb chops generously on both sides with salt and black pepper.
- 04
Heat olive oil in a heavy frying pan over medium-high heat and sear chops for 3 to 4 minutes per side until browned.
- 05
Transfer chops to a plate to rest for 5 minutes while loosely covered with foil.
- 06
Add minced garlic to pan for 30 seconds, pour in beef broth and mustard while scraping up browned bits, simmer 3 minutes, then swirl in remaining 20g butter.
A LITTLE KITCHEN KNOW-HOW
Pan Deglazing
Pouring cold liquid into a hot cooking pan after searing meat to dissolve rich caramelized food bits into sauce.
Notes from the kitchen
- Allow chops to rest before serving so meat juices reabsorb evenly.
- Blend peas while still hot to ensure a smooth, velvety purée consistency.
- Original home-cooking adaptation inspired by British; regional versions vary.
- Use halal-certified meat, poultry, stock, sauces, cheese and other processed ingredients. Check labels and avoid cross-contamination. Recipe screening is not halal certification.
