LET’S MAKE IT
Step by step
- 01
Pat salmon fillets thoroughly dry with paper towels and season skin side lightly with salt.
- 02
Heat vegetable oil in a wide skillet over medium-high heat, place salmon skin-side down, and sear for 4 minutes until skin is crisp.
- 03
Flip salmon over carefully, push fillets to one side of the pan, and add the mixed mushrooms to the open space.
- 04
Sauté mushrooms for 2 minutes until slightly softened.
- 05
Pour dashi stock, halal soy sauce, rice vinegar, and grated ginger into the pan around the salmon and mushrooms.
- 06
Add unsalted butter, reduce heat to low, cover skillet with lid, and simmer gently for 3 to 4 minutes until salmon is tender and sauce is rich.
A LITTLE KITCHEN KNOW-HOW
Wafu Butter Basting
Emulsifying cold butter into savory Japanese broth to coat seafood and vegetables in a light, silky glaze.
Notes from the kitchen
- Tearing wild mushrooms by hand instead of slicing absorbs broth much better.
- Swirl the butter in right at the end to create a silky emulsion with the umami dashi broth.
- Original home-cooking adaptation inspired by Japanese; regional versions vary.
- Use halal-certified meat, poultry, stock, sauces, cheese and other processed ingredients. Check labels and avoid cross-contamination. Recipe screening is not halal certification.
