LET’S MAKE IT

Step by step

  1. 01

Heat olive oil in a large skillet over medium-high heat.

  2. 02

Add sliced halal turkey sausage and sear for 5 minutes until browned on both sides, then transfer to a plate.

  3. 03

Add diced onion, green bell pepper, and celery to the skillet oil and sauté for 5 minutes until softened.

  4. 04

Stir in minced garlic and cajun seasoning mix, cooking for 1 minute until fragrant.

  5. 05

Add drained red kidney beans and halal chicken broth, bringing the pan to a simmer.

  6. 06

Mash about one-third of the beans with the back of a spoon against the side of the skillet to release natural starches.

  7. 07

Return browned turkey sausage to the skillet, reduce heat to medium-low, and simmer for 10 minutes until thickened.

  8. 08

Stir in sliced green onions and serve hot over steamed long-grain rice.

A LITTLE KITCHEN KNOW-HOW

Starch Thickening by Mashing

Crushing cooked legumes directly in cooking liquid to release natural starches and create a rich, creamy consistency.

Notes from the kitchen

  • Mashing a portion of the beans naturally thickens the sauce without needing any extra flour or cornstarch.
  • Taste the skillet before adding extra salt, as store-bought cajun seasonings and sausages already contain salt.
  • Original home-cooking adaptation inspired by Cajun; regional versions vary.
  • Use halal-certified meat, poultry, stock, sauces, cheese and other processed ingredients. Check labels and avoid cross-contamination. Recipe screening is not halal certification.
