LET’S MAKE IT
Step by step
- 01
Heat 1 tablespoon of vegetable oil in a heavy pot over medium heat, then add the sliced halal beef sausage and brown for 5 minutes until crisp on the edges.
- 02
Add the chopped scallions, diced tomatoes, and ground cumin directly into the pot with the sausage, sautéing for 3 to 4 minutes until soft.
- 03
Stir in the rinsed brown lentils, diced yellow potatoes, and diced carrots, coating them evenly with the aromatic tomato mixture.
- 04
Pour in the halal beef broth, bring the mixture to a rapid boil over high heat, then cover and reduce heat to low.
- 05
Simmer covered for 25 to 30 minutes until the lentils and root vegetables are completely tender.
- 06
Season with salt and pepper to taste, then ladle into deep bowls and serve hot.
A LITTLE KITCHEN KNOW-HOW
Hogao Sweating
Sautéing scallions, tomatoes, and spices together in oil to release aromatic compounds and build a rich sauce base.
Notes from the kitchen
- Rinse the lentils thoroughly in cold water before cooking to remove starch and debris.
- Add a dash of lime juice at the table to brighten the savory soup flavors.
- Original home-cooking adaptation inspired by Colombian; regional versions vary.
- Use halal-certified meat, poultry, stock, sauces, cheese and other processed ingredients. Check labels and avoid cross-contamination. Recipe screening is not halal certification.
