LET’S MAKE IT
Step by step
- 01
Soak sliced lotus root in cold water for 5 minutes, then drain and pat thoroughly dry with paper towels.
- 02
Heat vegetable oil in a skillet over medium heat, add lotus root slices, and fry for 4 minutes until crisp and golden brown; transfer to a plate.
- 03
In the same skillet, add the ground beef and grated ginger, breaking the meat into small crumbles with chopsticks or a spatula.
- 04
Pour in halal soy sauce, brown sugar, and dashi stock once the beef is no longer pink.
- 05
Simmer over medium heat for 4 minutes, stirring constantly until liquid reduces almost completely and meat is savory and caramelized.
- 06
Drizzle with sesame oil, toss beef with the reserved crispy lotus root, and spoon over bowls of warm steamed rice.
A LITTLE KITCHEN KNOW-HOW
Soboro Crumbles
Stirring minced meat continuously during simmering breaks it down into uniform, fine crumbles that absorb seasonings evenly.
Notes from the kitchen
- Drying lotus root thoroughly prevents oil splatters and ensures maximum crispness during frying.
- Using four chopsticks bound together helps crumble ground beef into very fine, authentic soboro texture.
- Original home-cooking adaptation inspired by Japanese; regional versions vary.
- Use halal-certified meat, poultry, stock, sauces, cheese and other processed ingredients. Check labels and avoid cross-contamination. Recipe screening is not halal certification.
