Filipino Beef Kare-Kare In Savory Peanut Sauce

LET’S MAKE IT

Step by step

  1. 01

Heat 1 tablespoon of vegetable oil in a heavy Dutch oven over medium-high heat. Sear the beef chuck cubes until browned on all sides, about 6 to 8 minutes, then set beef aside on a plate.

  2. 02

In the same pot, add the minced garlic and chopped onion. Saute for 3 minutes until soft and translucent.

  3. 03

Return the browned beef to the pot, pour in the halal beef broth, and bring to a boil. Reduce heat to low, cover, and simmer for 40 minutes until the beef is fork-tender.

  4. 04

Whisk the creamy peanut butter and dissolved annatto mixture into the simmering broth until fully incorporated and smooth.

  5. 05

Add the sliced eggplant and yardlong beans to the pot. Cover and cook over medium-low heat for 6 to 8 minutes until tender.

  6. 06

Stir in the fish sauce and adjust seasoning with salt to taste. Top with the bok choy, cover, and steam for 2 minutes until wilted before serving hot with steamed rice.

A LITTLE KITCHEN KNOW-HOW

Nut Sauce Emulsification

Whisking smooth peanut butter directly into hot braising broth to create a silky, naturally thickened gravy without clumping.

Notes from the kitchen

  • Use pure, smooth peanut butter without added cocoa or strong spices for the cleanest nutty flavor.
  • Steaming the green vegetables on top at the very end keeps their colors vibrant and textures crisp.
  • Original home-cooking adaptation inspired by Filipino; regional versions vary.
  • Use halal-certified meat, poultry, stock, sauces, cheese and other processed ingredients. Check labels and avoid cross-contamination. Recipe screening is not halal certification.
