Filipino Golden Garlic Fried Rice (Sinangag) With Crispy Eggs

LET’S MAKE IT

Step by step

  1. 01

Heat 2 tablespoons of oil in a large skillet or wok over low heat.

  2. 02

Add minced garlic and stir constantly for 3 to 4 minutes until golden brown and fragrant.

  3. 03

Scoop out half of toasted garlic chips with a slotted spoon and reserve for topping.

  4. 04

Increase heat to medium-high, add cold rice to pot, and break apart clumps with a spatula.

  5. 05

Season rice with salt, pepper, and soy sauce, tossing continuously for 6 minutes until heated through and steam rises.

  6. 06

In a separate non-stick skillet, heat remaining 1 tablespoon oil over high heat and fry eggs until edges are brown and crispy.

  7. 07

Divide fried rice into bowls, top each with a crispy fried egg, and sprinkle with reserved toasted garlic and green onions.

A LITTLE KITCHEN KNOW-HOW

Garlic Oil Infusion

Slowly frying garlic in cool oil extracts flavor into the fat, which coats every grain of rice when stir-fried.

Notes from the kitchen

  • Using chilled day-old rice prevents the grains from sticking together and turning mushy during stir-frying.
  • Toast garlic slowly on low heat so it becomes crunchy without scorching or turning bitter.
  • Original home-cooking adaptation inspired by Filipino; regional versions vary.
  • Use halal-certified meat, poultry, stock, sauces, cheese and other processed ingredients. Check labels and avoid cross-contamination. Recipe screening is not halal certification.
