Step by step

  1. 01

Heat 1 tablespoon oil in a deep pot over medium-high heat.

  2. 02

Sear chicken thighs for 3 minutes per side until lightly browned, then transfer chicken to a plate.

  3. 03

Add chopped onion and minced garlic to pot, sautéing for 2 minutes until tender.

  4. 04

Pour in tomato sauce and fish sauce, scraping up browned bits from bottom of pot.

  5. 05

Return chicken to pot, add chicken stock, cover, and simmer over low heat for 15 minutes.

  6. 06

Add potatoes and carrots, cover again, and cook for 12 minutes until vegetables are tender.

  7. 07

Stir in green bell pepper chunks and simmer uncovered for 5 minutes until sauce thickens slightly.

A LITTLE KITCHEN KNOW-HOW

Searing and Simmering

Browning meat first builds deep caramelized flavors before a slow braise tenderizes protein and root vegetables.

Notes from the kitchen

  • Browning chicken pieces first creates deep umami flavors that enrich the tomato base.
  • Using bone-in chicken thighs provides more moisture and flavor during simmer compared to chicken breast.
  • Original home-cooking adaptation inspired by Filipino; regional versions vary.
  • Use halal-certified meat, poultry, stock, sauces, cheese and other processed ingredients. Check labels and avoid cross-contamination. Recipe screening is not halal certification.
