LET’S MAKE IT
Step by step
- 01
Pat the beef chunks dry with paper towels and season generously with salt and black pepper.
- 02
Heat vegetable oil in a heavy Dutch oven over medium-high heat and sear the beef until deep golden brown on all sides, then remove to a plate.
- 03
Add chopped onion and sliced carrots to the same pot and cook for 5 minutes until soft and fragrant.
- 04
Pour in apple vinegar and beef stock, scraping up any browned bits stuck to the bottom of the pot.
- 05
Return the beef to the pot, add bay leaves and ground cloves, bring to a simmer, then cover and braise on low heat for 1.5 to 2 hours until the beef is fork-tender.
- 06
Stir in crushed gingersnap crumbs during the final 10 minutes of cooking, stirring continuously until the sauce thickens into a glossy gravy.
A LITTLE KITCHEN KNOW-HOW
Slow Braising
Cooking meat slowly submerged in spiced acidic liquid over low heat breaks down tough connective tissue into rich tenderness.
Notes from the kitchen
- Crushed gingersnaps serve as both traditional sweetener and thickener for authentic Sauerbraten sauce.
- Allow the beef to simmer gently on low heat to prevent tough meat.
- Original home-cooking adaptation inspired by German; regional versions vary.
- Use halal-certified meat, poultry, stock, sauces, cheese and other processed ingredients. Check labels and avoid cross-contamination. Recipe screening is not halal certification.
