LET’S MAKE IT

Step by step

  1. 01

Melt 2 tablespoons of butter in a pan over low heat and add sliced onions, cooking slowly for 20 minutes until deep golden brown.

  2. 02

In a mixing bowl, whisk together flour, eggs, milk, nutmeg, and half a teaspoon of salt until a thick, stretchy dough forms.

  3. 03

Bring a large pot of salted water to a gentle boil over medium-high heat.

  4. 04

Press dough through a spätzle maker or scrape thin dough strips off a moist cutting board directly into boiling water.

  5. 05

Boil noodles for 2 minutes until they rise to the surface, then remove with a slotted spoon into a warm dish.

  6. 06

Toss warm noodles immediately with remaining butter and shredded cheese until melted, then garnish with caramelized onions and chives.

A LITTLE KITCHEN KNOW-HOW

Scraped Noodle Technique

Spreading wet dough onto a damp cutting board and slicing small, thin strips into boiling water for irregular, rustic noodles.

Notes from the kitchen

  • Do not overwork spätzle dough once mixed so noodles remain tender.
  • If you lack a spätzle press, a colander with wide round holes works well.
  • Original home-cooking adaptation inspired by German; regional versions vary.
  • Use halal-certified meat, poultry, stock, sauces, cheese and other processed ingredients. Check labels and avoid cross-contamination. Recipe screening is not halal certification.
