LET’S MAKE IT

Step by step

  1. 01

Lay the beef slices flat on a clean surface, season lightly with salt and black pepper, and spread German mustard evenly over each strip.

  2. 02

Distribute the diced onions and dill pickle slices at one short end of each beef slice.

  3. 03

Roll each beef slice tightly around the filling starting from the pickle end, and secure each roll with two wooden toothpicks.

  4. 04

Heat vegetable oil in a heavy Dutch oven over medium-high heat and sear the beef rolls until browned on all sides, about 6 minutes total.

  5. 05

Pour in the halal beef stock and add caraway seeds, gently scraping the bottom of the pot to release any browned bits.

  6. 06

Cover tightly, turn heat down to low, and simmer for 45 minutes until the beef is fork-tender.

  7. 07

Whisk cornstarch with cold water, stir into the simmering broth, cook for 3 minutes until thickened into gravy, and remove toothpicks before serving.

A LITTLE KITCHEN KNOW-HOW

Rolling and Braising Rouladen

Filling thin cuts of meat with aromatic pickles and mustard, securing them tightly, and low-simmering in broth to break down connective fibers into a tender finish.

Notes from the kitchen

  • Pound the beef cutlets gently between parchment paper to an even thickness so they roll cleanly without tearing.
  • Count the toothpicks inserted into each roll to ensure all are removed before serving.
  • Original home-cooking adaptation inspired by German; regional versions vary.
  • Use halal-certified meat, poultry, stock, sauces, cheese and other processed ingredients. Check labels and avoid cross-contamination. Recipe screening is not halal certification.
