LET’S MAKE IT
Step by step
- 01
Heat 1 tablespoon of vegetable oil in a skillet over medium-high heat; sear halibut pieces for 2 minutes per side, then transfer to a plate.
- 02
Heat remaining tablespoon of oil in a pot and sauté sliced onions over medium heat for 6 minutes until caramelized and translucent.
- 03
Add carrots and sweet potato cubes, cooking for 3 minutes.
- 04
Stir in curry powder, coating vegetables completely for 1 minute until fragrant.
- 05
Pour in vegetable broth, halal soy sauce, and apple sauce; cover and simmer on low heat for 12 to 15 minutes until sweet potatoes are soft.
- 06
Gently nestle seared halibut pieces into curry, simmering uncovered for 3 minutes until fish is cooked through and sauce is velvety.
A LITTLE KITCHEN KNOW-HOW
Curry Base Bloom
Toasting curry spices directly in sautéed vegetables before adding liquid releases aromatic essential oils, yielding a deeper sauce flavor.
Notes from the kitchen
- Grated apple or apple sauce gives Japanese curry its signature fruit-forward sweet depth.
- Handle seared halibut gently when adding to curry to keep pieces whole.
- Original home-cooking adaptation inspired by Japanese; regional versions vary.
- Use halal-certified meat, poultry, stock, sauces, cheese and other processed ingredients. Check labels and avoid cross-contamination. Recipe screening is not halal certification.
