LET’S MAKE IT

Step by step

  1. 01

Place quartered potatoes into a large pot of salted water, bring to a boil, and cook for 15 minutes until tender.

  2. 02

Blanch fresh spinach in boiling water for 1 minute, drain, cool in ice water, and blend with 2 tablespoons of water into a smooth green puree.

  3. 03

Drain cooked potatoes, add green spinach puree, and mash thoroughly with a potato masher until smooth and evenly green.

  4. 04

Fold sweet corn kernels and green peas into the green potato mash until distributed, adjust seasoning with salt, and keep warm.

  5. 05

Heat vegetable oil in a heavy frying pan over high heat until smoking hot.

  6. 06

Season beef sirloin strips with ground cumin and salt, then flash-sear beef with minced garlic in batches for 2 to 3 minutes until browned.

  7. 07

Spoon warm green mukimo mash onto plates and top with hot seared garlic beef strips.

A LITTLE KITCHEN KNOW-HOW

Herbal Mash Integration

Incorporating a dark green leaf puree into warm cooked potatoes prior to mashing to bind color, nutrients, and moisture uniformly.

Notes from the kitchen

  • Do not overcrowd the pan when searing beef to ensure high heat creates a good crust without steaming meat.
  • Blend spinach thoroughly to achieve the traditional vibrant green color across the mash.
  • Original home-cooking adaptation inspired by Kenyan; regional versions vary.
  • Use halal-certified meat, poultry, stock, sauces, cheese and other processed ingredients. Check labels and avoid cross-contamination. Recipe screening is not halal certification.
