LET’S MAKE IT

Step by step

  1. 01

Place goat meat in a pot with 1 cup water and half of the salt, simmer covered for 20 minutes until tender and water evaporates.

  2. 02

Heat vegetable oil in a heavy cast iron skillet over medium-high heat, add boiled goat meat, and sear for 5 minutes until golden brown.

  3. 03

Add sliced red onion, minced garlic, grated ginger, and green chiles to skillet, sautéing for 4 minutes until onions soften.

  4. 04

Stir in diced tomatoes, curry powder, and remaining salt, scraping up any browned bits from bottom of skillet.

  5. 05

Cook uncovered over medium heat for 8 minutes, stirring continuously until tomato mixture reduces into a thick glaze coating meat.

  6. 06

Toss with chopped cilantro and remove from heat immediately before serving.

A LITTLE KITCHEN KNOW-HOW

Wet Frying

A pan-frying method where cooked meat is rapidly tossed in a concentrated tomato reduction until thick and tightly coated.

Notes from the kitchen

  • Pre-boiling bone-in goat meat ensures tenderness before high-heat pan frying.
  • Keep heat medium-high during the final reduction step for maximum caramelization without burning.
  • Original home-cooking adaptation inspired by Kenyan; regional versions vary.
  • Use halal-certified meat, poultry, stock, sauces, cheese and other processed ingredients. Check labels and avoid cross-contamination. Recipe screening is not halal certification.
