LET’S MAKE IT

Step by step

  1. 01

Heat vegetable oil in a wide heavy-bottomed skillet over medium-high heat.

  2. 02

Add thinly sliced red onions and cook for 8 to 10 minutes, stirring frequently until deeply browned and caramelized.

  3. 03

Stir in garlic ginger paste and ground pilau masala, sautéing for 1 minute until highly aromatic.

  4. 04

Add cubed chicken pieces and cook for 5 minutes until browned on all sides.

  5. 05

Stir in diced tomatoes and rinsed basmati rice, mixing well to coat the rice grains in the spiced onion oil.

  6. 06

Pour in warm halal chicken broth, bring to a boil, then reduce heat to low, cover tightly with a lid, and simmer for 18 minutes until rice is tender and liquid is absorbed.

  7. 07

Remove skillet from heat and let rest covered for 5 minutes before fluffing gently with a fork.

A LITTLE KITCHEN KNOW-HOW

Caramelizing Onions for Pilau

Slowing frying onions to a dark golden brown stage releases natural sugars that color and flavor traditional East African rice dishes.

Notes from the kitchen

  • Caramelizing the onions thoroughly is essential because it gives the pilau its classic deep brown color and rich savory flavor.
  • Rinse basmati rice under cold water until the water runs clear to prevent the finished pilau from becoming sticky.
  • Original home-cooking adaptation inspired by Kenyan; regional versions vary.
  • Use halal-certified meat, poultry, stock, sauces, cheese and other processed ingredients. Check labels and avoid cross-contamination. Recipe screening is not halal certification.
