LET’S MAKE IT
Step by step
- 01
Heat one tablespoon of vegetable oil in a heavy skillet over medium-high heat.
- 02
Add the cubed lamb in a single layer and sear until deeply browned on all sides, about 6 to 8 minutes, then remove and set aside on a plate.
- 03
Reduce heat to medium, add the remaining oil, and cook the red onion until soft and translucent, about 4 minutes.
- 04
Stir in the minced garlic, grated ginger, and ground coriander, blooming the aromatics for 1 minute until fragrant.
- 05
Pour in the strained tamarind water and halal beef broth, bring to a simmer, and return the seared lamb along with any accumulated juices to the pan.
- 06
Cover and simmer gently on low heat for 20 minutes until the meat is tender and the sauce reduces to a thick glaze coating the lamb.
A LITTLE KITCHEN KNOW-HOW
Ukwaju Glaze Reduction
Simmering fruit-based tamarind extract with savory broth and aromatics until the liquids evaporate into a shiny glaze that coats meat evenly.
Notes from the kitchen
- Strain the tamarind water through a fine mesh sieve before adding to remove any leftover pulp or seeds.
- Serve hot with warm flatbread or coconut rice to balance the tart flavor of the tamarind glaze.
- Original home-cooking adaptation inspired by Kenyan; regional versions vary.
- Use halal-certified meat, poultry, stock, sauces, cheese and other processed ingredients. Check labels and avoid cross-contamination. Recipe screening is not halal certification.
