Palestinian Allspice Braised Beef And Okra Skillet

LET’S MAKE IT

Step by step

  1. 01

Heat one tablespoon of olive oil in a skillet over medium-high heat and sear the beef cubes for 5 minutes until browned on all sides.

  2. 02

Remove the beef and add the remaining olive oil to the skillet along with the trimmed okra. Fry for 4 minutes until lightly blistered, then transfer okra to a plate.

  3. 03

Add the diced yellow onion to the skillet and cook for 4 minutes until softened and translucent.

  4. 04

Stir in the minced garlic, ground allspice, ground cinnamon, and salt, cooking for 1 minute until fragrant.

  5. 05

Return the beef to the skillet, pour in the crushed tomatoes and 1/2 cup of water, bring to a simmer, cover, and cook for 25 minutes until the beef is tender.

  6. 06

Gently fold the seared okra back into the sauce and simmer uncovered for 5 minutes until the okra is tender but intact.

A LITTLE KITCHEN KNOW-HOW

Okra Searing

Searing trimmed okra in hot oil seals the outer surface and reduces mucilage release during slow simmering.

Notes from the kitchen

  • Frying the okra in oil before simmering prevents it from becoming slimy in the tomato sauce.
  • Serve hot alongside fluffy vermicelli rice or warm flatbread.
  • Original home-cooking adaptation inspired by Palestinian; regional versions vary.
  • Use halal-certified meat, poultry, stock, sauces, cheese and other processed ingredients. Check labels and avoid cross-contamination. Recipe screening is not halal certification.
