LET’S MAKE IT
Step by step
- 01
Heat olive oil in a wide heavy-bottomed pot over medium-high heat until simmering.
- 02
Add diced onion and ground beef, breaking up meat with a wooden spoon for 7 minutes until fully browned.
- 03
Stir in ground allspice, cumin, and sea salt, cooking for 1 minute until fragrant.
- 04
Add the rinsed cracked freekeh to the pot and stir constantly for 2 minutes to lightly toast the grains in olive oil.
- 05
Pour in warmed halal beef broth, bring to a rolling boil, then reduce heat to low and cover tightly with a lid.
- 06
Simmer covered for 25 minutes until liquid is fully absorbed and freekeh is tender; let rest covered off heat for 5 minutes before scattering toasted pine nuts over top.
A LITTLE KITCHEN KNOW-HOW
Toast-Braising Freekeh
Sautéing cracked green wheat in aromatics before simmering in broth to release its smoky flavor and lock in a firm texture.
Notes from the kitchen
- Rinse freekeh multiple times to remove any small debris before cooking.
- Allow the dish to rest off the heat covered so the grains finish steaming evenly.
- Original home-cooking adaptation inspired by Palestinian; regional versions vary.
- Use halal-certified meat, poultry, stock, sauces, cheese and other processed ingredients. Check labels and avoid cross-contamination. Recipe screening is not halal certification.
