LET’S MAKE IT
Step by step
- 01
Bring pearl barley and halal vegetable stock to a boil in a saucepan, then lower heat, cover, and simmer for 20 minutes until tender.
- 02
In a small pot, combine grated cooked beetroot, prepared horseradish, and 1 tablespoon of butter over low heat for 4 minutes to create a warm glaze; season with salt.
- 03
Drain excess liquid from the barley, stir in remaining tablespoon of butter and fresh dill, then keep warm.
- 04
Pat salmon fillets thoroughly dry with paper towels and season skin and flesh sides with salt.
- 05
Heat vegetable oil in a non-stick skillet over medium-high heat, place salmon skin-side down, cook undisturbed for 4 minutes until skin is crisp, flip and cook 3 minutes longer until opaque.
- 06
Divide dill barley among plates, place salmon fillets on top, and dress with spoonfuls of warm beetroot horseradish glaze.
A LITTLE KITCHEN KNOW-HOW
Crispy Skin Searing
Pressing fish fillets firmly into a hot pan during initial contact prevents curling and creates an even, crisp crust.
Notes from the kitchen
- Thoroughly drying salmon skin ensures maximum crispiness and prevents hot oil splatter.
- Adjust prepared horseradish to taste depending on desired heat level.
- Original home-cooking adaptation inspired by Polish; regional versions vary.
- Use halal-certified meat, poultry, stock, sauces, cheese and other processed ingredients. Check labels and avoid cross-contamination. Recipe screening is not halal certification.
