LET’S MAKE IT
Step by step
- 01
Heat two tablespoons of olive oil in a wide skillet over medium heat, add the cod chunks, and poach gently for 5 to 6 minutes until cooked through and easy to flake. Remove fish and set aside.
- 02
Add the remaining two tablespoons of olive oil to the pan along with the matchstick potatoes. Fry over medium-high heat for 8 minutes until golden and crisp, then remove potatoes and drain on paper towels.
- 03
Turn the heat down to low, add the sliced onions to the skillet, and cook slowly for 10 minutes until deeply caramelized and sweet.
- 04
Add the minced garlic to the onions and cook for 1 minute until fragrant, then return the flaked cod and crisp matchstick potatoes to the skillet.
- 05
Turn off the heat completely and immediately pour the beaten eggs over the warm skillet contents, folding continuously for 1 to 2 minutes so the eggs gently set into a silky sauce without scrambling dry.
- 06
Fold in the pitted black olives and chopped fresh cilantro, then serve immediately directly from the warm skillet.
A LITTLE KITCHEN KNOW-HOW
Residual-Heat Emulsification
Incorporating raw beaten eggs into a hot cooked dish off the direct heat source to create a smooth, rich sauce coating without curding.
Notes from the kitchen
- Turn off the burner before adding the beaten eggs so the residual heat creates a creamy texture rather than dry scrambled eggs.
- Cut the matchstick potatoes uniformly thin to ensure they crisp up evenly during frying.
- Original home-cooking adaptation inspired by Portuguese; regional versions vary.
- Use halal-certified meat, poultry, stock, sauces, cheese and other processed ingredients. Check labels and avoid cross-contamination. Recipe screening is not halal certification.
