LET’S MAKE IT

Step by step

  1. 01

Parboil sliced potatoes in salted boiling water for 5 minutes until slightly tender, then drain thoroughly.

  2. 02

Heat 2 tablespoons of olive oil in a skillet over medium heat and cook sliced onions and garlic for 10 minutes until soft and translucent.

  3. 03

Preheat oven to 200C and lightly grease a shallow baking dish with half a tablespoon of olive oil.

  4. 04

Layer the drained potatoes evenly across the bottom of the dish, sprinkle with half the paprika, and top with the cooked onion mixture.

  5. 05

Arrange cod fillets over the onion layer, sprinkle with remaining paprika, sea salt, and black pepper, then drizzle with lemon juice and remaining olive oil.

  6. 06

Scatter black olives around the fish and bake uncovered for 20 minutes until cod is cooked through and flakes easily with a fork.

  7. 07

Garnish with chopped fresh parsley before serving warm directly from the baking dish.

A LITTLE KITCHEN KNOW-HOW

Layered Baking

Arranging delicate fish over pre-cooked aromatic vegetables allows heat to gently steam the fish from below while crisping the top.

Notes from the kitchen

  • Ensure potato slices are uniform in thickness so they cook evenly during parboiling.
  • Use a wide spatula to transfer baked cod fillets carefully without breaking them apart.
  • Original home-cooking adaptation inspired by Portuguese; regional versions vary.
  • Use halal-certified meat, poultry, stock, sauces, cheese and other processed ingredients. Check labels and avoid cross-contamination. Recipe screening is not halal certification.
