LET’S MAKE IT

Step by step

  1. 01

Season beef cutlets evenly on both sides with a pinch of salt and black pepper.

  2. 02

Mix minced garlic and chopped parsley together, then spread the mixture evenly across one side of each beef cutlet.

  3. 03

Roll up each cutlet tightly from the short end into a cylinder and secure firmly with kitchen twine.

  4. 04

Heat olive oil in a heavy deep skillet over medium-high heat and sear the beef rolls for 2 minutes per side until evenly browned, then transfer to a plate.

  5. 05

In the same skillet, cook the diced onion for 4 minutes until softened, then pour in crushed tomatoes, beef stock, and fresh thyme sprigs.

  6. 06

Return beef rolls to the skillet, bring the liquid to a gentle simmer, cover with a lid, and cook on low heat for 45 minutes until the meat is tender.

A LITTLE KITCHEN KNOW-HOW

Braising

Cooking seared meat covered in a small amount of seasoned liquid over low heat to breakdown tough connective tissue.

Notes from the kitchen

  • Tying the rolls tightly with kitchen twine prevents the garlic filling from escaping during braising.
  • Make sure to trim twine before serving.
  • Original home-cooking adaptation inspired by Provençal; regional versions vary.
  • Use halal-certified meat, poultry, stock, sauces, cheese and other processed ingredients. Check labels and avoid cross-contamination. Recipe screening is not halal certification.
