LET’S MAKE IT

Step by step

  1. 01

Season the chicken drumsticks evenly with herbes de Provence, salt, and black pepper.

  2. 02

Heat olive oil in a heavy skillet over medium-high heat and sear the drumsticks for 6 minutes until golden brown on all sides.

  3. 03

Remove chicken from the skillet and set aside on a clean plate.

  4. 04

Add minced garlic and sliced bell peppers to the same skillet, sautéing for 3 minutes until fragrant.

  5. 05

Pour in the halal chicken stock and lemon juice, then stir in the black olives and return the chicken drumsticks to the skillet.

  6. 06

Cover and simmer on medium-low heat for 20 minutes until the chicken reaches an internal temperature of 74C (165F) and peppers are tender.

A LITTLE KITCHEN KNOW-HOW

Pan-Braising

Searing proteins at high heat to lock in color before finishing low and slow in a flavorful aromatic liquid.

Notes from the kitchen

  • Pat chicken skin completely dry with paper towels before searing to achieve a golden finish.
  • Substitute green bell peppers or sweet yellow peppers to add extra color to the pan dish.
  • Original home-cooking adaptation inspired by French Provençal; regional versions vary.
  • Use halal-certified meat, poultry, stock, sauces, cheese and other processed ingredients. Check labels and avoid cross-contamination. Recipe screening is not halal certification.
