LET’S MAKE IT

Step by step

  1. 01

Combine ground beef, breadcrumbs, egg, half a teaspoon of salt, and a quarter teaspoon of pepper in a bowl, mixing until combined.

  2. 02

Form ground meat mixture into 12 smooth, uniform meatballs.

  3. 03

Heat halal beef stock in a wide saucepan until barely simmering over medium-low heat.

  4. 04

Gently lower meatballs into the simmering stock, cover, and poach gently for 10 minutes until cooked through.

  5. 05

Transfer meatballs to a warm plate using a slotted spoon, and measure out 400ml of warm poaching broth.

  6. 06

In a clean pan, melt butter over medium heat, whisk in flour, and cook for 1 minute until pale yellow.

  7. 07

Gradually whisk in reserved broth and heavy cream, cooking for 3 minutes until smooth and creamy.

  8. 08

Stir capers, lemon zest, and meatballs into the cream sauce, simmering for 2 minutes before serving hot.

A LITTLE KITCHEN KNOW-HOW

Stock Poaching

Submerging seasoned minced meat directly into barely simmering spiced liquid to retain maximum moisture without frying.

Notes from the kitchen

  • Keep poaching liquid at a gentle simmer rather than a boil so the meatballs remain delicate and soft in texture.
  • Whisk cream slowly into the roux base to maintain a silky sauce texture without separation.
  • Original home-cooking adaptation inspired by German; regional versions vary.
  • Use halal-certified meat, poultry, stock, sauces, cheese and other processed ingredients. Check labels and avoid cross-contamination. Recipe screening is not halal certification.
