LET’S MAKE IT
Step by step
- 01
In a medium bowl, whisk together unsweetened cocoa powder, sea salt, and black pepper.
- 02
Add the halal beef strips to the bowl and toss until thoroughly coated in the cacao dry spice rub.
- 03
Heat coconut oil in a heavy cast-iron skillet over high heat until shimmering.
- 04
Add the spiced beef strips in a single layer and sear without moving for 2 minutes, then stir-fry for another 2 minutes until browned; transfer beef to a warm plate.
- 05
Lower heat to medium, add minced garlic and sliced red bell pepper to the skillet, and saute for 2 minutes.
- 06
Pour coconut cream into the skillet, stirring constantly for 3 minutes to scrape up caramelized cocoa bits and thicken the cream.
- 07
Return the seared beef to the skillet, stir in fresh lime juice, and remove from heat immediately to serve.
A LITTLE KITCHEN KNOW-HOW
Cacao Dry Rub Sear
Applying unsweetened cacao mixed with salt to meats creates a deep mahogany crust that balances rich coconut and citrus glazes.
Notes from the kitchen
- Use high heat when searing cocoa-rubbed meat to form a flavorful crust without burning the cacao powder.
- Ensure the skillet is completely hot before adding beef strips to ensure maximum sear and lock in juices.
- Original home-cooking adaptation inspired by Samoan; regional versions vary.
- Use halal-certified meat, poultry, stock, sauces, cheese and other processed ingredients. Check labels and avoid cross-contamination. Recipe screening is not halal certification.
