LET’S MAKE IT

Step by step

  1. 01

Toss the beef strips in a bowl with smoked paprika, ground coriander, half of the minced garlic, and half a teaspoon of salt.

  2. 02

Melt butter in a medium saucepan over medium heat, add the remaining garlic, and saute for 1 minute until fragrant.

  3. 03

Stir in the sweet corn kernels, heavy cream, and a pinch of salt, then simmer for 8 minutes until the corn is tender.

  4. 04

Transfer half of the corn mixture to a blender, pulse until smooth, and stir back into the saucepan to create a thick creamed texture.

  5. 05

Heat vegetable oil in a large skillet over high heat and add the seasoned beef strips in a single layer.

  6. 06

Sprinkle brown sugar over the beef and sear for 4 to 5 minutes, tossing continuously until glossy and cooked through, then serve over the warm creamed corn.

A LITTLE KITCHEN KNOW-HOW

High-Heat Glaze Searing

Cooking sliced meat quickly over high heat while adding brown sugar allows the spice rub to caramelize into a glossy glaze without overcooking.

Notes from the kitchen

  • Avoid overcrowding the skillet so the beef sears quickly and forms a caramelized crust instead of steaming.
  • Adjust creamed mealies sweetness to taste by adding a pinch of black pepper or extra butter at the end.
  • Original home-cooking adaptation inspired by South African; regional versions vary.
  • Use halal-certified meat, poultry, stock, sauces, cheese and other processed ingredients. Check labels and avoid cross-contamination. Recipe screening is not halal certification.
