LET’S MAKE IT

Step by step

  1. 01

Steep the saffron threads in 2 tablespoons of hot water for 5 minutes.

  2. 02

Season the chicken thighs generously on both sides with salt and black pepper.

  3. 03

Heat olive oil in a large wide skillet over medium-high heat; add chicken skin-side down and sear for 6 minutes until crispy and golden brown, then flip and cook for 3 minutes before transferring to a plate.

  4. 04

In the same skillet, add the diced onion and green bell pepper, sautéing over medium heat for 5 minutes until soft.

  5. 05

Add minced garlic, sweet smoked paprika, and short-grain rice, stirring continuously for 2 minutes to coat and toast the grains.

  6. 06

Pour in the warm chicken broth and the steeped saffron water with threads, stirring once to distribute the rice evenly.

  7. 07

Nestle the seared chicken thighs back into the pan, bring to a simmer, then lower heat to medium-low and cook uncovered without stirring for 18 to 20 minutes until the rice is tender and liquid is absorbed.

  8. 08

Remove from heat, cover with a clean kitchen towel for 5 minutes to rest before serving.

A LITTLE KITCHEN KNOW-HOW

Saffron Steeping

Pre-soaking delicate saffron threads in warm liquid extracts their essential oils, vibrant yellow color, and rich herbal aroma before incorporating them into rice dishes.

Notes from the kitchen

  • Resist the urge to stir the rice after adding liquid so it forms a tender, uniform grain structure.
  • Short-grain Spanish rice absorbs broth exceptionally well while keeping its shape.
  • Original home-cooking adaptation inspired by Spanish; regional versions vary.
  • Use halal-certified meat, poultry, stock, sauces, cheese and other processed ingredients. Check labels and avoid cross-contamination. Recipe screening is not halal certification.
