LET’S MAKE IT

Step by step

  1. 01

In a medium bowl, combine sliced halal beef sirloin with 2 tablespoons of green seasoning and half of the amchar masala powder, turning to coat evenly, and let sit for 10 minutes.

  2. 02

Heat coconut oil in a large heavy skillet over medium-high heat until hot and shimmering.

  3. 03

Add the sliced yellow onion and remaining amchar masala to the skillet, sautéing for 2 minutes until onions soften and spices release their aroma.

  4. 04

Increase heat to high, add the marinated beef in a single layer, and cook without moving for 3 minutes until deep golden crust forms.

  5. 05

Stir in the boiled cassava chunks, minced scotch bonnet pepper, remaining green seasoning, and halal beef broth, reducing heat to medium.

  6. 06

Simmer for 5 to 7 minutes, stirring occasionally, until the liquid coats the beef and cassava in a glossy sauce before serving.

A LITTLE KITCHEN KNOW-HOW

Amchar Dry-Blooming

Briefly cooking ground roasted spice blends directly in hot oil to unlock maximum flavor and fragrance before adding liquid.

Notes from the kitchen

  • Handle scotch bonnet peppers with gloves and remove seeds to control spicy heat.
  • Ensure cassava is thoroughly boiled until fork-tender before adding it to the quick-cooking beef skillet.
  • Original home-cooking adaptation inspired by Trinidadian; regional versions vary.
  • Use halal-certified meat, poultry, stock, sauces, cheese and other processed ingredients. Check labels and avoid cross-contamination. Recipe screening is not halal certification.
