Toss sliced sirloin strips with cornstarch and 1 teaspoon of soy sauce in a shallow bowl.

Heat peanut oil in a wok over high heat until faint wisps of smoke appear.

Add the marinated beef, spreading it quickly across the surface; stir-fry vigorously for 2 to 3 minutes until medium-rare.

Pour in the remaining soy sauce and squeeze over the fresh lime juice while tossing constantly.
- 06
Turn off heat immediately, throw in fresh mint leaves, toss for 5 seconds until just wilted, and serve straight away.
A LITTLE KITCHEN KNOW-HOW
Wok Flash-Frying
Cooking marinated meats rapidly over extreme heat to lock in natural juices while infusing herbaceous aromatics.
Notes from the kitchen
- Toss the fresh mint at the absolute end with the burner off to preserve bright color and herbal flavor.
- Use high heat to cook the beef fast so it stays juicy.
- Original home-cooking adaptation inspired by Chinese; regional versions vary.
- Use halal-certified meat, poultry, stock, sauces, cheese and other processed ingredients. Check labels and avoid cross-contamination. Recipe screening is not halal certification.
