LET’S MAKE IT

Step by step

  1. 01

Heat vegetable oil in a heavy Dutch oven over medium-high heat and sear beef cubes for 6 to 8 minutes until browned on all sides; transfer beef to a plate.

  2. 02

Add sliced onions to the remaining oil in the pot and cook over medium heat for 10 minutes until deeply golden brown.

  3. 03

Add garlic, ginger, black cardamom pods, ground coriander, and ground turmeric; stir continuously for 1 minute until highly aromatic.

  4. 04

Return browned beef to the pot, pour in beef broth, and bring liquid to a gentle boil.

  5. 05

Reduce heat to low, cover pot tightly, and simmer for 30 minutes until beef begins to soften.

  6. 06

Uncover, stir in halved dried apricots, re-cover, and simmer for an additional 15 minutes until beef is tender and sauce thickens.

  7. 07

Discard black cardamom pods, season sauce with salt and black pepper to taste, and serve hot.

A LITTLE KITCHEN KNOW-HOW

Sear-Braise Aromatics Integration

Browning beef pieces to develop maillard depth before building an aromatic spiced gravy and slow-braising until tender.

Notes from the kitchen

  • Caramelizing onions thoroughly creates the signature rich color and natural sweetness of Afghan korma gravies.
  • Crack whole black cardamom pods slightly before adding to release deep smokiness without letting seeds float loose.
  • Original home-cooking adaptation inspired by Afghan; regional versions vary.
  • Use halal-certified meat, poultry, stock, sauces, cheese and other processed ingredients. Check labels and avoid cross-contamination. Recipe screening is not halal certification.
