- 01
Heat 2 tablespoons olive oil in a skillet over medium-high heat, add whole okra, and pan-fry for 4 minutes until exterior turns bright green and slightly blistered.
- 02
Remove pan-fried okra from the skillet and set aside on a clean plate.
- 03
Add remaining oil, chopped onion, and sliced garlic to the skillet and cook for 4 minutes until translucent and fragrant.
- 04
Stir in ground coriander, sliced green chili, chopped tomatoes, and water, simmering for 5 minutes to form a thick gravy.
- 05
Gently nestle the pan-fried okra into the tomato sauce, cover with lid, and cook on low heat for 12 minutes.
- 06
Drizzle fresh lemon juice over the skillet and serve hot with fresh flatbread.
A LITTLE KITCHEN KNOW-HOW
Mucilage Control Pan-Frying
Pan-frying whole pods in hot oil before stewing to deactivate viscosity-producing enzymes.
Notes from the kitchen
- Keep okra caps trimmed without cutting into the seed cavity to prevent internal sap from releasing.
- High-heat initial searing dehydrates okra surfaces, preserving a tender bite without stickiness.
- Original home-cooking adaptation inspired by Afghan; regional versions vary.
- Use halal-certified meat, poultry, stock, sauces, cheese and other processed ingredients. Check labels and avoid cross-contamination. Recipe screening is not halal certification.
