LET’S MAKE IT

Step by step

  1. 01

Heat olive oil in a heavy pot or Dutch oven over medium-high heat.

  2. 02

Add diced beef chuck cubes in a single layer and sear for 6 minutes until deeply browned on all sides, then remove beef to a rimmed plate.

  3. 03

Add sliced smoked beef sausage to the pot and sauté for 4 minutes until browned, then remove and set aside with beef.

  4. 04

Reduce heat to medium, add diced onion and minced garlic, sautéing for 4 minutes until softened and translucent.

  5. 05

Return beef, sausage, and accumlated juices back to the pot along with the black beans and their canning liquid.

  6. 06

Add bay leaves and orange peel strips, bring stew to a simmer, then cover and cook over low heat for 20 minutes until flavors combine and beef is tender.

  7. 07

Remove bay leaves and orange peels, mash half a cup of beans against the side of the pot to thicken the gravy, stir in fresh cilantro, and serve.

A LITTLE KITCHEN KNOW-HOW

Starch mashing

Crushing a portion of cooked beans against the pot wall to release natural starches and naturally thicken bean stews.

Notes from the kitchen

  • Leaving the black bean canning starch intact builds a luscious, thick bean gravy naturally.
  • Orange peel adds a authentic bright note that balances the rich smoked meat flavors.
  • Original home-cooking adaptation inspired by Brazilian; regional versions vary.
  • Use halal-certified meat, poultry, stock, sauces, cheese and other processed ingredients. Check labels and avoid cross-contamination. Recipe screening is not halal certification.
