LET’S MAKE IT

Step by step

  1. 01

Heat olive oil in a heavy Dutch oven or deep saucepan over medium heat.

  2. 02

Add diced onion, red bell pepper, and minced garlic; cook for 5 minutes until vegetables soft and fragrant.

  3. 03

Add halal ground beef to the pot, breaking it up with a wooden spoon, and brown thoroughly for 6 minutes.

  4. 04

Stir in cubed kabocha squash, add 1/2 teaspoon salt, 1/4 teaspoon ground cumin, and pour in halal vegetable broth.

  5. 05

Bring liquid to a gentle boil, cover with lid, turn heat to low, and simmer for 15 minutes until squash is fork-tender.

  6. 06

Uncover pot and use a spoon to crush roughly half of the squash against the side of the pot to thicken the stew, then simmer uncovered for 3 minutes and finish with cilantro.

A LITTLE KITCHEN KNOW-HOW

Quibebe Thickening

Simmering hard winter squash in seasoned broth with proteins and partially mashing it to create a naturally thick stew without added starches.

Notes from the kitchen

  • Kabocha squash offers the best dense, sweet texture, but butternut squash can be used as an alternative.
  • Mash more or less squash depending on whether you prefer a chunkier or smoother stew consistency.
  • Original home-cooking adaptation inspired by Brazilian; regional versions vary.
  • Use halal-certified meat, poultry, stock, sauces, cheese and other processed ingredients. Check labels and avoid cross-contamination. Recipe screening is not halal certification.
