LET’S MAKE IT

Step by step

  1. 01

Heat olive oil in a heavy Dutch oven over medium-high heat and sear diced lamb until well browned on all sides, about 6 minutes.

  2. 02

Transfer lamb to a side plate and add sliced leek, diced carrots, and parsnips to the pot, cooking for 5 minutes until softened.

  3. 03

Return lamb to the pot and stir in rinsed pearl barley and fresh thyme sprigs until well mixed.

  4. 04

Pour in halal beef stock, season with black pepper, and bring the liquid to a rolling simmer.

  5. 05

Reduce heat to low, cover with a lid, and simmer gently for 50 minutes until barley is plump and lamb is tender.

  6. 06

Remove thyme sprigs, adjust seasoning with salt to taste, and serve warm in deep soup bowls.

A LITTLE KITCHEN KNOW-HOW

Braising

Slow cooking meat and hearty grains in liquid over low heat to tenderize tough cuts while building deep flavor.

Notes from the kitchen

  • Pearl barley absorbs liquid as it sits, so add extra broth when reheating leftovers.
  • Trim excess hard fat from the lamb shoulder before searing to keep the stew broth light.
  • Original home-cooking adaptation inspired by British; regional versions vary.
  • Use halal-certified meat, poultry, stock, sauces, cheese and other processed ingredients. Check labels and avoid cross-contamination. Recipe screening is not halal certification.
