LET’S MAKE IT

Step by step

  1. 01

Melt 1 tablespoon of butter in an ovenproof skillet over medium heat, add sliced leeks with a pinch of salt, and cook for 8 minutes until soft and tender.

  2. 02

Preheat the oven broiler setting to high heat.

  3. 03

In a small bowl, combine grated mature cheddar, panko breadcrumbs, English mustard, halal Worcestershire sauce, chopped parsley, and remaining melted butter until a cohesive crumb forms.

  4. 04

Season skinless salmon fillets lightly with salt and pepper, then lay them directly on top of the sautéed leeks in the skillet.

  5. 05

Press a quarter of the cheddar crumb mixture firmly onto the top surface of each salmon fillet.

  6. 06

Transfer skillet under the broiler about 15 cm from the heat source and broil for 8 to 10 minutes until the top crust is golden brown and salmon is opaque in the center.

A LITTLE KITCHEN KNOW-HOW

Gratinating

Topping cooked or semi-cooked food with a breadcrumb or cheese mixture and browning under direct overhead heat.

Notes from the kitchen

  • Wash sliced leeks thoroughly in cold water to remove any trapped grit before cooking.
  • Keep a close eye on the broiler as panko breadcrumbs can turn from golden to burnt quickly.
  • Original home-cooking adaptation inspired by British; regional versions vary.
  • Use halal-certified meat, poultry, stock, sauces, cheese and other processed ingredients. Check labels and avoid cross-contamination. Recipe screening is not halal certification.
