LET’S MAKE IT
Step by step
- 01
In a mixing bowl, combine ground halal beef, half of the scallions, half of the garlic, the beaten egg, 1 teaspoon of ground cumin, and half a teaspoon of salt.
- 02
Gently mix the beef combination by hand until uniform, then shape into 12 small round meatballs.
- 03
Heat vegetable oil in a skillet over medium-high heat and add meatballs, searing for 5 minutes until browned on all sides. Transfer meatballs to a plate.
- 04
Add remaining scallions, garlic, and 0.5 teaspoon ground cumin to the skillet, sautéing for 1 minute until aromatic.
- 05
Pour crushed tomatoes and 0.5 cup of water into the skillet, scraping up any browned bits on the bottom.
- 06
Return meatballs to the simmering gravy, cover with a lid, and cook over medium-low heat for 15 minutes until fully cooked through.
- 07
Garnish with fresh cilantro and serve hot over rice or cassava.
A LITTLE KITCHEN KNOW-HOW
Sear and Braise
Quick high-heat searing to create flavor crust followed by gentle simmering inside a seasoned sauce to cook meat through cleanly.
Notes from the kitchen
- Do not overwork meatball mixture to keep the texture soft and tender.
- Sear meatballs in batches if your skillet is crowded to ensure proper browning.
- Original home-cooking adaptation inspired by Colombian; regional versions vary.
- Use halal-certified meat, poultry, stock, sauces, cheese and other processed ingredients. Check labels and avoid cross-contamination. Recipe screening is not halal certification.
