Ethiopian Spiced Beef And Collard Greens Skillet

LET’S MAKE IT

Step by step

  1. 01

Heat the neutral cooking oil in a large skillet over medium heat, add the chopped onion, and sauté for 5 minutes until soft.

  2. 02

Add the garlic ginger paste and cook for 1 minute until fragrant.

  3. 03

Add the lean ground beef and salt, crumbling the meat with a wooden spoon for 6 to 8 minutes until fully browned.

  4. 04

Stir in the ground black cardamom and spiced clarified butter substitute, coating the beef evenly.

  5. 05

Add the sliced collard greens in small batches, stirring constantly until the greens wilt.

  6. 06

Reduce heat to medium-low, cover with a tight-fitting lid, and simmer for 8 minutes until greens are tender.

  7. 07

Remove lid, stir in sliced jalapeño rings, simmer for 1 final minute, and serve warm.

A LITTLE KITCHEN KNOW-HOW

Dry Steam Braising

Covering greens over low heat uses moisture released by the vegetables to cook them tender without adding liquid.

Notes from the kitchen

  • Finely ribboning the collard greens ensures quick and even cooking in the skillet.
  • If black cardamom is unavailable, ground green cardamom mixed with a dash of nutmeg offers a great warm profile.
  • Original home-cooking adaptation inspired by Ethiopian; regional versions vary.
  • Use halal-certified meat, poultry, stock, sauces, cheese and other processed ingredients. Check labels and avoid cross-contamination. Recipe screening is not halal certification.
