LET’S MAKE IT

Step by step

  1. 01

Heat 2 tablespoons of oil in a heavy pot over medium-high heat. Add beef cubes in a single layer and sear until deeply browned on all sides (7 to 8 minutes). Set beef aside on a plate.

  2. 02

Add minced garlic and onion to the remaining pot drippings, cooking for 3 minutes until softened.

  3. 03

Stir in the tomato paste and soy sauce, cooking for 2 minutes to caramelize the tomato paste.

  4. 04

Return beef to the pot, pour in the halal beef broth, and bring to a simmer. Cover, reduce heat to low, and cook for 40 minutes until beef begins to soften.

  5. 05

Add potato and carrot chunks to the pot. Stir in the smooth peanut butter until dissolved into the gravy.

  6. 06

Cover and simmer for an additional 15 minutes until vegetables are tender.

  7. 07

Stir in the red bell pepper strips and cook uncovered for 5 minutes until tender-crisp and sauce thickens before serving hot.

A LITTLE KITCHEN KNOW-HOW

Flavor Base Emulsification

Searing beef and frying tomato paste directly with aromatics to build a deeply savory fond before braising liquid is added.

Notes from the kitchen

  • Caramelizing tomato paste directly with aromatics before adding liquid yields a darker, more complex gravy.
  • A touch of peanut butter provides a savory, silky body without overpowering the tomato base.
  • Original home-cooking adaptation inspired by Filipino; regional versions vary.
  • Use halal-certified meat, poultry, stock, sauces, cheese and other processed ingredients. Check labels and avoid cross-contamination. Recipe screening is not halal certification.
