LET’S MAKE IT

Step by step

  1. 01

Whisk together ground peanuts, ground ginger, onion powder, cayenne pepper, and half a teaspoon of salt in a small bowl to form the kyinkyinga spice blend.

  2. 02

Toss the sliced beef with two-thirds of the spice blend in a mixing bowl until all pieces are evenly coated.

  3. 03

Heat one tablespoon of vegetable oil in a large skillet over high heat until shimmering.

  4. 04

Add coated beef in a single layer and sear undisturbed for two minutes, then stir-fry for one additional minute until browned; transfer beef to a plate.

  5. 05

Heat remaining oil in the same skillet and sauté sliced red onion and bell pepper for three minutes until crisp-tender.

  6. 06

Return cooked beef and accumulated juices to the skillet, sprinkle with remaining spice blend, and toss over high heat for one minute before serving.

A LITTLE KITCHEN KNOW-HOW

Dry Spice-Nut Rub Searing

Coating thinly sliced beef strips in a nut-and-spice powder before quick searing locks in moisture while creating a deeply flavorful crisp crust.

Notes from the kitchen

  • Pre-grinding salted roasted peanuts in a spice grinder creates an authentic suya coating texture without extra work.
  • Avoid overcrowding the skillet during step 4 so the beef sears quickly rather than steaming.
  • Original home-cooking adaptation inspired by Ghanaian; regional versions vary.
  • Use halal-certified meat, poultry, stock, sauces, cheese and other processed ingredients. Check labels and avoid cross-contamination. Recipe screening is not halal certification.
